Onion Apricot Chicken

Ingredients:

2 chicken breasts, diced into about 1 inch cubes
1 packet onion soup mix
1 jar apricot preserves
Pepper to taste

1. Cut chicken into cubes, and pepper liberally.
2. In sauce pan, combine jar of preserves, soup mix, and 1 jar of water.
3. Bring to boil.
4. Add in diced chicken.
5. Return to boil.
6. Reduce to simmer and cover.
7. Simmer on low for about an hour, stirring every 15-20 minutes.
8. Shred chicken using the back of spoon.
9. Simmer shredded chicken in sauce for about 10 more minutes.
10. Serve over rice.
